Last night, in collaboration with the fine folks at passion for pork marked the Common’s first pop restaurant of 2015. Chef Jesse Morrison-Gauthier and his team cooked up an amazing four course dinner, centred around the theme of Alberta pork. The four course meal consisted of pork trotter rillette with piccalilli and greens followed by a stuffed pork shoulder sandwich which was served with a sweet carrot and apricot soup with ancho dusted pork cracklings. The third course consisted of Asian pork patties served with sprouts herbs peanuts and miso, and lastly the meal was rounded out with a prosicutto  sorbet with black liquorice toffee and mellon.
